Did you know Canada is the world leader in producing and exporting lentils - and the prairie provinces are the heart of lentil country?

Why do we love lentils so much? Let us count the ways! High in protein, dietary fibre, minerals, and B vitamins, lentils are not only famous for their health benefits, but also for their versatility in so many flavourful dishes. Naturally gluten free and low on the glycemic index scale, these little low fat wonders are a great alternative for those looking for a staple starch that is slowly digested, keeping you fuller longer.

Canadian lentils are not just good for you, but also for the environment!

Lentils can produce their own nitrogen fertilizer. By lowering the amount of fertilizer needed to grow a crop, lentil production uses less energy and therefore produces less greenhouse gas. Lentils are also efficient at producing vegetable protein, using less water and less energy than animal protein production.

We have been using lentils as an ingredient for years, but through our partnership with Pulse Canada, we have substantially grown the number of recipes featuring lentils as a star ingredient on our menus.
